Cool Cucumber Soup

Ingredients

1 Large cucumber, peeled, seeded, quartered, and lightly salted
2 C Sour cream
1 t Lemon juice

1 T Splenda
1/4 t Salt
Pepper to taste
2 T Finely chopped mint leaves

Directions

Start by peeling one large cucumber. Then quarter it long ways into 4 pieces and remove the seed. Sprinkle a little salt over the slices and let them sit for about an hour.



After an hour has passed, rinse the salt from the cucumber slices and put them into a blender container and puree.



Once the cucumber is nice and smooth, add the sour cream, lemon juice, splenda, mint, salt and pepper and blend. Then just pop in the refrigerator until you are ready to serve.



Serve into pretty bowls and garnish with a cucumber twist and fresh mint leaves.
