Flax Seed Muffins

Ingredients

6 T Butter, melted
3 Large eggs
1/4 C Heavy cream
1/2 C Splenda
1 T Maple extract
1 T Vanilla extract

2 t Cinnamon
1 t Nutmeg
1/2 t Baking powder
1/2 t Baking soda
1 C Flaxseeds, ground
1/4 C Low carb bake mix
4 ozs Walnuts, chopped

Directions

Beat the first 3 ingredients together.



Add the next 3 ingredients and mix well.



Add the rest of the ingredients and mix.



Place batter into 12 paper cupcake liners in a muffin tin and bake at 375F degrees for 15 to 20 minutes. You can double the recipe and get 18 to 20 larger size muffins.




Additional Information

Try using other flavorings, banana, pineapple, or unsweetened coconut. Add some shredded zucchini for moister muffins.
