Tomatoe Vegetable Soup

Ingredients

4 T Olive oil
2 Medium onions
3 Medium carrots
3 Stalks celery
1 Green pepper
1 Medium turnip, peeled

2 Quarts water
3 C Tomatoe sauce
1/2 Bunch parsley, chopped
2 t Flax seed oil
Salt and pepper to taste

Directions

Cut onions and carrots in cubes and saute them in a few tablespoons olive oil over medium heat.



Chop celery, cut turnip, green pepper into cubes and add to the onion/carrot mixture.



Add 2 quarts water and bring to a boil and cook on low heat.



Add tomatoe sauce and bring to boil and turn off heat. Season with salt and pepper. For a creamy soup, blend soup in blender or food processor.



Add flax oil to slightly cooled soup, stir and garnish with parsley.
