Amaretto Crab Salad

Ingredients

1 C Flaked lump crab meat (do not use imitation crab meat)
4 Hard boiled eggs, diced
1/3 C Blanched almonds, quartered
1 C Finely chopped celery
1 T Dill pickle relish

8 Black olives, sliced
1/2 C Mayo
2 T Sour cream
1 t Splenda
Dash almond extract
1/4 C Cider vinegar
1 t Salt

Directions

Mix mayo, sour cream, almond extract, splenda, vinegar and salt to make dressing.



Mix crab meat with the rest of the ingredients.



Add dressing to crab meat mixture and mix thoroughly, Chill.



Serve salad in avocado halves or lettuce cups, garnish with tomatoe wedges.
