Tex Mex Puffins

Ingredients

3 Large eggs
1/4 C Water plus 1/4 C heavy cream mixed
1/4 C Green onions with tops, chopped
1/4 C Mexican blend shredded cheese

2 T Jalapeno nacho slices
2 T Black olives, chopped
1/3 C Low carb bake mix
1/4 t Salt
1/4 t Baking powder
Additional chopped green onions with tops

Directions

In a preheated 425F degree oven, heat 24 generously greased mini-muffin cups.



In covered blender container, blend all ingredients, except additional onions, at medium speed until well blended.



Fill hot muffin cups 2/3 full. Sprinkle with additional onions.



Bake until puffed and lightly browned, about 10 minutes.
