Blueberry Pudding Cake

Ingredients

2 C Blueberries
2 T Lemon juice
1 C Almond flour
2 t Baking powder
1/4 t Salt
1/2 t Nutmeg
3/4 C Splenda
1/2 C Heavy cream or low carb milk

1 Egg
1/4 C Butter -- melted
1 t Vanilla
1 C Splenda
1 t Xanthan gum
1 C Boiling water

Directions

Place blueberries and lemon juice in an 8x8 inch pan.



Mix almond flour, baking powder, salt, nutmeg, and 3/4 cup splenda. Beat in cream or milk, egg, melted butter, and vanilla. Spread over berries.



Mix 1 cup splenda with xanthan gum and sprinkle over batter. Pour boiling water over all. Bake at 350F for 40 - 50 minutes.
