Mexican Hush Puppies

Ingredients

3/4 c Atkins corn muffin mix
1/2 c Almond flour
1 1/2 t Baking powder
1/2 t Salt
1/8 t Red pepper
1 1/2 c Shredded Monterey -Jack cheese

1 can Chopped green chiles -(4oz), drained
1 T Minced onion
1 Egg
1/2 c Heavy cream
Vegetable oil

Directions

Combine first 8 ingredients in a large bowl; make a well in center of mixture. Combine egg and cream; add to dry ingredients, stirring just until moistened. Pour oil to a depth of 3 inches into a Dutch oven; heat to 375 deg. Carefully drop batter by rounded tablespoonsful into hot oil. Fry a few at a time 3 to 4 minutes or until golden brown, turning once. Drain on paper towels. Serve immediately
