20 Minute Chicken Cacciatore

Ingredients

8 Boneless, skinless chicken breast cut into 1-inch strips
1 Bay leaf
1 t Parsley
1/4 t Salt
1/4 t Pepper
1 16 oz can Peeled tomatoes

1 8 oz can Tomatoe sauce
1 Large green pepper chopped
1/2 Cup celery, chopped
1 Medium onion, chopped
1 Cup mushrooms, sliced
2 t Dried oregano
1 t Dried basil

Directions

Spray large skillet with non-stick spray.



Preheat pan over medium heat.



Add chicken, and cook, stirring, for 10 to 12 minutes, or until no longer pink.



Reduce heat.



Add tomatoes and their juice, tomato sauce, green pepper, celery, onion, garlic, basil, parsley, and salt.



Bring to boil; reduce heat and simmer, covered for 10 minutes.



Serve over cooked spaghetti squash, riced cauliflower or low carb pasta.
