Ingredients

1 Small onion
1 Small green pepper
4 Garlic cloves
4 Boneless New York beef strip steaks
Salt and pepper to taste
1 T Olive oil

2 cans (14 1/2 ounces each) drained diced tomatoes
1/2 t Crushed Italian herb seasoning
1/4 t Crushed red pepper flakes

Directions

Chop the onion and green pepper. Thinly slice the garlic.

Heat a large cast-iron skillet over high heat. Season the steaks with salt and pepper, add them to the pan, and cook for 5 minutes per side for medium-rare, or to desired doneness. Transfer the steaks to a large plate, cover loosely with aluminum foil, and keep warm.

In a large nonstick skillet, heat the olive oil over high heat. Add the chopped onion and green pepper and garlic and stir to coat with the oil. Reduce the heat to medium, cover, and cook for 3 to 5 minutes, or until the vegetables are nearly tender.

Stir in the drained tomatoes, Italian seasoning, and pepper flakes. Cover and simmer for 5 to 7 minutes, or until sauce has thickened slightly.
