Spinach, and Cheshire Cheese Salad with Rosemary Dressing

Ingredients

1 Bag of baby spinach leaves
8oz Cheshire Cheese
3 Stalks of celery, thinly sliced
6 Strawberries, sliced

For the dressing:

3 T Extra virgin olive oil
2 t Sherry or wine vinegar
Pinch of splenda
1 t Dijon mustard
1 t Fresh rosemary spikes, finely chopped
1 T Chopped parsley

Directions

Put all the dressing ingredients into a large bowl and whisk together.



Add the spinach leaves and toss together. Divide between four deep plates. Top with the sliced berries, celery and, finally, crumble over the Cheshire cheese.
