Arugula & Goat Cheese Mashed Cauliflower

Ingredients

3 lbs Cauliflower florets
1/4 C (1/2 stick) Butter
1 C Heavy cream
8 ounces soft fresh goat cheese (such as Montrachet), crumbled

1 C (packed) Chopped arugula leaves (about 2 large bunches)
1 t Xanthan gum

Directions

Cook cauliflower in large pot of boiling salted water until tender, about 30 minutes. Drain.



Return cauliflower to pot. Stir over low heat until excess moisture evaporates.



Add butter; mash cauliflower until smooth.



Bring cream to simmer in saucepan. Add xanthan gum until thickened. Remove from heat.



Add goat cheese; whisk until melted. Add cream mixture to cauliflower; Blend until smooth.



Stir in arugula. Season with salt and pepper.
