Ingredients

SALAD:

Leftover Grilled sliced chicken breast
Lettuce
Red cabbage
sesame seeds
Fresh chives
Few mandarin orange segments
DRESSING:

1/2 C Mayonnaise
5 T Rice vinegar
2 T Splenda
2 T Sesame oil
1 T Soy sauce
1/4 t Garlic powder

Directions

Mix salad ingredients together. Chill.

Combine all dressing ingredients in a medium bowl and mix with an electric mixer until well-blended and splenda is dissolved. Chill.

Toss salad with dressing, top with a few mandarin orange segments.

Additional Information

Use as much or each veggie in the salad to your preference, normally I use 1 chicken breast per person, and divide a bag of oriental salad mix between 4 servings. I use quite a bit of the sesame seeds and chives to taste.

Use only about 4 mandarin orange segments, cut up on top of each salad to keep carb count under control, use it just for the flavor.
