Steaks with Stilton-Portobello Sauce

Ingredients

6 (12-ounce) Boneless steaks
4 t Chopped fresh tarragon
1 t Freshly ground pepper
10 T Butter, divided
16 ozs Portobello mushroom caps, sliced
2/3 C Dry red wine or beef broth

1 C Sour cream
6 ozs Stilton or blue cheese, crumbled and divided

Garnish: fresh tarragon sprigs

Directions

Rub steaks with tarragon and pepper.



Melt 4 tablespoons butter in a large skillet over medium-high heat. Cook steaks 4 to 5 minutes on each side or to desired degree of doneness. Remove from skillet, and keep warm.
