Crab Cakes with Sherry-Cayenne Mayonnaise

Ingredients

2 pounds crabmeat
3/4 cup Low carb dry bread crumbs (make yourself using lc bread)
1/4 cup minced red bell pepper
1/4 cup minced green bell pepper
1/4 cup minced yellow bell pepper
1/4 cup minced red onion
1 1/2 celery ribs, minced
1/2 jalape
1/2 teaspoon freshly ground black pepper, divided
1 1/2 cups mayonnaise, divided
2 large eggs
1 teaspoon hot pepper sauce
1 teaspoon Worcestershire sauce
2 tablespoons sherry wine vinegar
1/2 teaspoon cayenne pepper
1/4 cup vegetable oil, divided
2 lemons, cut into wedges

Directions

Check crab meat for pieces of shell. Gently squeeze out any excess moisture. Do not break up the large pieces of meat as these enhance the texture of the crab cakes.
