Grilled Vegetables Dijon

Ingredients

1/2 C Dijon Mustard
1/3 C Caesar Dressing
1 medium eggplant, sliced
2 medium zucchini squash, diagonally sliced 1/2-inch-thick

1/2 lb medium-size fresh mushrooms, cleaned, trimmed
1 jar (12 oz.) roasted red peppers, drained, cut into matchstick strips

Directions

WHISK mustard and dressing in small bowl; set aside.



GRILL eggplant, zucchini and mushrooms on medium-high heat 6 minutes or until tender, brushing with 1/4 cup dressing mixture and turning occasionally.



ARRANGE grilled vegetables and red pepper strips on serving platter; drizzle with remaining dressing.



Serve immediately.
