Roasted Garlic Chicken

Ingredients

2 Frying chickens, cut into serving pieces
40 Cloves of garlic, peeled
2 C Celery chopped
1 C Dry white wine

1/2 C Olive oil
1 T Poultry seasoning
1/2 C Fresh parsley, chopped
1/2 C Fresh basil, chopped
1 Lemon
Salt and pepper to taste

Directions

Pre-heat oven to 375F degrees.



Place chicken in a shallow baking dish skin side up.



Tuck all garlic cloves around, under, and inbetween chicken pieces.



Sprinkle chopped celery around chicken pieces.



Mix wine olive oil, poultry seasoning, basil, and parsley together. Drizzle this mixture over chicken and vegetables.



Squeeze the juice from the lemon and drizzle over chicken in pan.



Salt and pepper chicken to taste.



Cover pan with aluminum foil and bake in preheated oven for 45 minutes to 1 hour.
