Butter Pecan Pork Rinds

Ingredients

8 C Pork rinds (break up large pieces)
Non stick cooking spray
1 C Broken pecan pieces
2 T Butter

1/3 C Sugar free Davinci carmel syrup
1 Pkg Instant sugar free butterscotch pudding mix
3/4 t Vanilla

Directions

Spray a 17x12x2 inch roasting pan with non stick cooking spray. Place pork rinds, and pecans in the pan. Keep warm in a 300F degree oven.



In a small saucepan melt the butter. Remove from heat. Stir in the davinci syrup, pudding mix, and vanilla. Pour mixture over pork rinds. With a large spoon, gently toss the rinds with the pudding mixture to coat.



Bake pork rinds uncovered in a 300F degree oven for 16 to 20 minutes stirring halfway through baking. Remove pan from the oven. Turn mixture onto a large piece of foil. Cool rinds completely. When cool separate rinds. Store tightly covered in a cool dry place for up to 1 week.
