Ingredients

1 T Butter
1 Small onion, chopped
1 C Low carb beer
1 lb Shredded monterey jack cheese

5 T Heavy cream
1/8 t Xanthan gum
Vegetables, low carb bread cubes, cooked meats for dipping

Directions

Melt butter and saute onion until soft and translucent.



Stir in beer and heat until bubbly.



Over low heat, stir in cheese, continue to heat until cheese has melted.



In small bowl mix xanthan gum and heavy cream. Add to the cheese mixture and cook, stirring 2 to 3 minutes until smooth and thickened.
