Tahitian Paradise Muffins

Ingredients

1 C Almond flour
1 Egg, beaten
1 t Baking powder
2 Packets Splenda
1/2 t Vanilla extract
2 T Heavy cream

2 T Macadamia nuts, chopped
1/4 t Orange extract
1/2 t Banana extract
1/2 t Pineapple extract
2 T Unsweetened coconut
1 t Brown sugar twin

Directions

Preheat oven to 350F degrees.



Grease a 12 mini muffin pan with butter and set aside.



Mix the dry ingredients together.



Add the egg, extracts, and cream (you may add a little water to make enough to fill 12 mini muffin tins). Add the nuts.



Fill mini muffin cups until 2/3 full.



Bake at 350F degrees for 8 to 10 minutes until golden and a toothpick inserted in the center of a muffin comes out clean.

Tahitian Paradise Frosting:



2 ozs Cream cheese

1/8 C Heavy cream

1/4 t Orange extract

1/2 t Banana extract

1/2 t Pineapple extract

2 Packets splenda



Whip all ingredients together and frost muffins.



Decorate with a small amount of unsweetened coconut and chopped macadamia nuts.
