Ingredients

3 T Splenda
1 t Xanthan gum
1/2 C Davinci Gourmet sugar free orange syrup
1/2 C Davinci Gourmet sugar free blueberry syrup
1 1/2 C Fresh wild blueberries, divided

1 (8 oz) Package cream cheese, softened
1/4 C Splenda
1 t Vanilla extract
8 Low carb tortillas
2 T Butter

Directions

In a small saucepan combine 3 T Splenda, xanthan gum, stir in orange davinci syrup. Cook and stir over medium heat until sauce is clear and thickened.



Stir in 1 Cup blueberries and 1/2 cup Davinci blueberry syrup. Return to simmer. Simmer and stir for 1 minute.



In a mixing bowl beat cream cheese until light and fluffy. Add 1/4 cup splenda and vanilla, beat until smooth and creamy.



Sprad each tortilla with about 2 T of the cheese mixture.



Place about 6 blueberries across the center of each tortilla. Roll jelly roll style.



In a medium skillet, melt 1 T butter over medium heat, place tortillas one at a time seam side down in skillet and cook turning occasionally until evenly browned, about 3 minutes. Halway through, repeat with remaining butter and tortillas.



Serve topped with warm blueberry sauce.
