Hearty Italian Soup

Ingredients

2 lbs Mild or hot bulk italian sausage
1 Medium green pepper, chopped
1 Medium onion, chopped
1 C Celery, chopped
1 C Mushrooms, sliced
1 16 oz Frozen vegetables of choice
Salt & pepper to taste

1 28 oz Can Italian seasoned tomatoes, cut up
2 8 oz cans tomatoe sauce
2 8 oz cans water
1 Can chicken broth
3/4 t Garlic powder
3/4 C Low carb pasta (optional)
Shredded mozzerella cheese

Directions

In a large soup pot brown sausage, onion, and green pepper until well done and no longer pink. Drain off fat.



Stir in remaining ingredients except the pasta and cheese.



Bring soup to a boil. Turn down heat and cover. Simmer 20 minutes. Stir in pasta is desired. Cover and simmer 15 minutes more until pasta is tender. Stirring occasionally.



Top each serving with shredded cheese.
