Chocolate Cheese Mousse Pie

Ingredients

1/4 C Heavy cream
1 Envelope unflavored gelatin
2/3 C Heavy cream
2 Eggs, separated
6 T Splenda

1 T Unsweetened cocoa
1 T Vanilla extract
1 1/2 C Cottage cheese
1/3 C Almond flour
1/8 t Cinnamon

Directions

Pour 1/4 cup heavy cream into a blender container, sprinkle gelatin over cream. Allow to soften for 5 minutes.



Heat 2/3 cup heavy cream to simmering. Pour into blender container and blend until the gelatin dissolves.



Add egg yolks, 4 T splenda, cocoa, and vanilla extract. Blend at medium speed until well mixed.



Add cottage cheese and blend until smooth.



Refrigerate until thick.



Beat egg whites, add remaining splenda and fold into chocolate mixture.



Mix almond flour and cinnamon. Place in an 8" pie plate. Carefully pour in chocolate mixture and refrigerate.
