Shanghai Green Beans

Ingredients

2 lbs Green beans, trimmed
3 T Rice wine vinegar
2 T Vegetable oil
1 t Grated fresh ginger
1 t Salt

1/4 t Splenda
1/4 t Grated lemon peel
2/3 C Green onions, sliced
1/2 C Chopped roasted cashews, divided

Directions

Bring a large saucepan filled 2/3 full with water to a boil. Add beans and cooke until just tender, about 7 minutes. Drain in a colander under cold running water.



Meanwhile, combine vinegar, oil, ginger, salt, splenda, and lemon peel in a large bowl. Add beans, green onions, and 1/4 cup of the cashews, toss well and transfer to a serving bowl.



Sprinkle top with remaining cashews. Serve immediately.
