Lemon Cheesecake Bars

Ingredients

1/2 C Almond flour
1/4 t Ground cinnamon
Cooking spray, as needed
2 (8 oz)Packages Neufchatel cheese, softened
1 C Ricotta cheese

1/2 C Splenda
2 t Vanilla extract
2 t Lemon extract
2 Eggs
2 Egg whites

Directions

Combine almond flour and cinnamon. Spread evenly in bottom of a 13x9x2 inch baking pan coated with cooking spray.



With an electric mixer, beat together the next 5 ingredients until smooth. Add eggs and egg whites, beating well after each addition.



Carefully pour over crumb mixture.



Bake in a 350F degree oven 20 to 25 minutes or until cheesecake is lightly browned on edges and almost set in the center. Let cool 30 minutes. Cover and chill overnight.
