Country Chicken and Biscuits

Ingredients

6 C Cut-up cooked chicken
1 1/4 C Chopped onions
1 1/4 C Chopped celery
1 bag (1 pound) frozen mixed vegetables of choice
2 cans (14 1/2 ounces each) chicken broth

Salt and pepper to taste
2 tablespoons chopped fresh parsley
3 1/2 t Xanthan gum
3 1/3 C Low carb bake mix
1 C Heavy cream

Directions

Heat oven to 400F degrees.



Heat chicken, onions, celery, mixed vegetables and chicken broth to boiling in 5-quart Dutch oven. Stir xanthan gum (a little at a time)into mixture until dissolved. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in parsley, salt, and pepper. Pour into ungreased rectangular pan, 13x9x2 inches.



Stir bake mix and cream until soft dough forms. Drop by 30 teaspoonfuls onto chicken mixture.



Bake 25 to 30 minutes or until biscuits are golden brown.
