Cheddar Baked Chicken

Ingredients

CHICKEN:

3 lbs Bone in chicken breasts (skin left on)
2 T Butter, melted

CHEESE SAUCE:

1/4 t Salt
1/4 t Nutmeg
2 C Heavy cream
1 C Cheddar cheese, shredded
1 C American cheese, shredded
1 T Dijon mustard
2 T Pimiento, chopped
1/2 t Chili powder
1 1/2 t Dried parsley flakes

Directions

Preheat oven to 400F degrees.



Arrange chicken breasts in a single layer in baking dish, skin side down.



Drizzle chicken with the melted butter.



Bake chicken uncovered for 20 minutes. Turn chicken skin side up. Bake for 20 minutes longer.



Combine salt, nutmeg, heavy cream, chili powder, dried parsley flakes, and dijon mustard in a medium saucepan.



Cook over medium heat, whisking constantly until thickened and beginning to bubble, about 8 minutes.



Remove fom heaat and stir in the cheeses and pimiento; stir until melted and thick.



Remove chicken from oven. Pour sauce over the chicken. Return to oven for 20 minutes longer or until chicken is tender and no longer pink.
