Grilled Cheddar-Shrimp Sandwich

Ingredients

16 Jumbo shrimp cooked, deveined & peeled
2 C Vermont white cheddar cheese, grated
1 t Tabasco Sauce
1 T Ranch Dressing

4 T Bacon crumbled into bits
2 T Mayonnaise
1 T Yellow mustard
6 Low carb bread slices
4 Tomatoe slices
Salt & pepper to taste

Directions

Mix Tabasco sauce & Ranch Dressing into mayonnaise.



Spread on each piece of bread.



Chop shrimp into 1/4" pieces. Mix this & the bacon with the cheddar cheese. Spread this mixture on 1 piece of bread, then place the tomato slices on, sprinkle with salt & pepper as desired. Place 2nd piece of bread on top.



Grill on a griddle until bread is toasted and cheese is melted.
