Spicy Sausage Tortilla Soup

Ingredients

1 cup Vegetable Oil
4 Low carb tortillas, cut into strips
1 small zucchini
1 medium carrot, peeled
1 rib celery, trimmed
2 cans (14 1/2 ounces) chicken broth

1/4 teaspoon ground cumin
1/4 teaspoon ground red pepper
2 package (14 ounces) Turkey Smoked Sausage, thinly sliced
1 Lime, cut into wedges

Directions

Place oil in small saucepan. Heat over medium high heat until hot. Fry tortilla strips, one handful at a time until stiffened and lightly brown. Drain on paper towels.



Cut zucchini, carrot and celery into 2-inch julienned strips. In a 3-quart saucepan, add broth, cumin and pepper. Bring to a boil.



Add vegetable strips and sausage pieces. Reduce heat and simmer 5 minutes until sausage is heated through (140
