Bleu Crusted Steaks

Ingredients

4 T Chilled butter, divided
3 Garlic cloves, chopped
1 Large shallot, chopped
1 T Fresh thyme, chopped
3/4 C Low sodium beef broth
1/2 C Dry red wine
1/2 C Coarsely crumbled Maytag bleu cheese

1/4 C Crushed pork rinds
1 T Fresh parsley, chopped
4 (1 inch thick) boneless steaks, (2 lbs total)
Salt/pepper to taste

Directions

SAUCE:



In skillet over medium high heat, melt 1 T butter. Saute garlic, shallot, and thyme 5 minutes or until shallot is tender. Add broth and wine. Boil fof 12 minutes until sauce is reduced to 1/2 cup. Set aside.



CRUST:



Using fork, stir together cheese, pork rinds and parsley in a small bowl to coat cheese evenly with pork rinds.



STEAKS:



Heat broiler. Melt 2 T butter in a large, heavy skillet over medium high heat. Season steaks with salt and pepper. Cook in skillet to desired doneness, about 5 minutes per side for medium rare.



TO CRUST STEAKS:



Transfer steaks to rimmed baking sheet. Reserve skillet.



Press cheese mixture onto top of each steak. Broil for 2 minutes or until cheese browns. Watch carefully, crust burns easily. Transfer steaks to plates.



Pour sauce into reserve skillet. Bring to a boil, scraping up browned bits. Boil for 2 minutes. Whisk remaining 1 T butter into sauce. Season with salt/pepper to taste.



Spoon sauce around steaks.
