Buffalo Chicken Cornbread with Bleu Cheese Sauce

Ingredients

1 lb Chicken breast tender strips
1/4 C Louisiana style hot sauce
1/2 C Mayonnaise
1/4 C Sour cream
3 ozs Bleu cheese, crumbled
1/2 t Salt

2 t Lemon juice
3 T Butter
1/2 C Chopped red onion
1/2 C Chopped celery
1 package Atkins corn muffin mix (to mix, follow directions on package)

Directions

Preheat oven to 450F.



Place the chicken tender strips in a bowl. Toss with the hot sauce to coat well. Set aside to marinate for 20 minutes.



In a small bowl combine the mayonnaise, sour cream, bleu cheese, salt and lemon juice. Cover and place in the refrigerator until ready to serve.
