Caesar Salad with Cilantro & Green Chile Dressing

Ingredients

DRESSING:

1 C Cilantro leaves
3/4 C Mayo
3/4 C Vegetable oil
1 (4 oz) Can dices green chiles
1/4 C Red wine vinegar
1/4 C Pumpkin seeds (pepitas) toasted
1/4 C Cotija or feta cheese
1 Clove garlic, peeled
1/2 t Salt
1/8 t Pepper
SALAD:

1 Large head romaine, chopped
1 (4 oz) Can Whole green chiles, cut into strips
1/2 c Cotija or feta cheese, crumbled
1/2 C Pumpkin seeds (pepitas) toasted

Directions

DRESSING:



Place cilantro, mayo, oil, chiles, vinegar, pumpkin seeds, cheese, garlic, salt, and pepper in food processor or blender container, cover. Process until coarsely chopped. Cover, chill 1 hour or until flavors are blended.



SALAD:



Combine lettuce, chiles, cheese, and pumpkin seeds in large bowl. Add 1/2 cup cilantro and green chile dressing, toss well to coat.



Store unused dressing in refrigerator for up to one week.
