CRAB BISQUE

Ingredients

1 T Minced onion
2 T Butter
2 C Each chicken broth and heavy cream
1 lb Crab meat, thawed if necessary

Salt to taste
Chopped parsley
3 1/2 t Xanthan gum

Directions

Saute onion in butter.



Gradually stir in chicken broth and half-and-half; cook and stir 5 minutes.



Add xanthan gum a little at a time until thickened.



Break crab into chunks; add to soup mixture. Salt to taste. Heat thoroughly. DO NOT BOIL.



Garnish with parsley.
