Bourbon County Turkey

Ingredients

1 turkey, 15 to 20 lbs

MARINADE:

1 C Dry red wine
1/2 C Bourbon
1/2 C Dry sherry
1/2 C Soy sauce
3 T Olive oil
2 T Splenda
5 Whole star anise
1 T Minced fresh ginger
Freshly ground black pepper and salt to taste
GLAZE:

1 1/4 C Bourbon
2/3 C Davinci Sugar free simple syrup
2/3 C Tomatoe sauce
1/4 C Brown sugar twin
2 1/2 t Xanthan gum

Directions

Have the turkey cut as as follows: drumsticks removed and cut crosswise through the bone, thighs removed and halved through the bone, breast removed (left on the bone) and each half cut into four pieces, and wings cut at elbows, tips discarded.



Rinse pieces well and pat dry.



Stir all marinade ingredients together in a large bowl. Add the turkey pieces and coat them in the mixture. Cover, and marinate overnight.



Preheat oven to 325F degrees.



Lift the turkey pieces fromt he marinade, and arrange them in one of two roasting pans. Pour 1/2 cup of the marinade (or 1 cup if using two pans) over the turkey.



Bake for 1 hour, turning and basting every 20 minutes. If you are using 2 pans, rotate them every 30 minutes).



Increase oven temperature to 450F degrees.



Stir the glaze ingredients together in a bowl. Brush the turkey well with the glaze and bake 30 minutes, brushing and turning every 5 minutes.
