Holiday Turnip Casserole

Ingredients

3 lbs Turnips, peeled and quartered
1 C Butter
6 ozs Cream cheese, softened
2 C Cheddar cheese, shredded
1 (2 oz) Jar pimiento, drained

1 Small green pepper, finely chopped
1 Bunch green onions, finely chopped
1/2 C Parmesan cheese
1/4 C Heavy cream
Salt/white pepper to taste

Directions

Cook turnips in boiling water until tender, drain and mash.



Add butter and cream cheese, beat at medium speed with an electric mixer until smooth.



Stir in 1 cup cheddar cheese and the next 6 ingredients.



Spoon mixture into lightly buttered 11 x 7 x 1 1/2 inch baking dish.



Bake at 350F degrees for 30 to 40 minutes or until thoroughly heated.



Sprinkle with remaining cheddar cheese, and bake 5 minutes or until cheese is melted.
