Classic Fried Green Tomatoes and Chipotle Dipping sauce

Ingredients

6 green tomatoes, sliced 1/4-inch thick
salt and pepper
Almond flour for dusting

2 eggs, beaten
1 Package Atkins corn muffin mix
Bacon grease for frying

Directions

Salt and pepper the tomato slices; dust lightly with almond flour.



Dip slices in beaten egg, letting excess drip off, then coat well with Atkins corn muffin mix.



Fry in hot bacon grease until browned, turning gently (about 3 minutes each side). Keep warm in a low 200

CHIPOTLE DIPPING SAUCE:



1 C Mayonnaise

1 chipotle pepper in adobo sauce, chopped finely

1 Garlic clove, crushed

Salt/pepper to taste



Place mayo, garlic and chipotle pepper in blender container; cover. Blend until smooth.
