Ingredients

2 lbs Medium cremini mushrooms
6 T Butter
Dash tabasco sauce
Dash cayenne pepper

8 ozs Cream cheese, softened
1/2 C Bleu cheese, crumbled
4 T Green onion, chopped

Directions

Remove stems from mushrooms, chop enough stems to equal 1/2 cup.



Cook 1 lb of the mushroom caps in 3 T butter over medium heat, drain.



Repeat with remaining pound of mushroom caps and 3 T butter.



In a medium bowl combine cream cheese, bleu cheese mixing until well blended.



Stir in dash tabasco and dash of cayenne pepper.



Add green onions and chopped stems.



Fill mushroom caps and place on cookie sheet. Broil until tops are golden. Makes about 40 stuffed caps.
