Days Gone By Bread Pudding

Ingredients

2 C Heavy cream
3 Eggs, beaten
1/3 C Splenda
1/2 t Vanilla extract
1/2 t Salt

4 Slices low carb white bread without crust
1 t Cinnamon
Dash nutmeg

Directions

Heat cream over low heat until hot, but not boiling.



In a bowl, combine eggs, splenda, and salt. Stir well.



Gradually stir about 1/4 of the hot cream into the egg mixture and stir.



Add remaining cream stirring constantly. Stir in vanilla.



Place bread slices in a buttered baking dish (2 quart size).



Pour the cream mixture over the bread.



Combine cinnamon and nutmeg. Sprinkle over pudding mixture.



Bake, uncovered at 300F degrees for about 50 minutes or until a knife inserted in the center comes out clean.



Serve warm with maple pecan ice cream.
