Scallion Crusted Corned Beef with Dijon Sauce

Ingredients

1 Corned beef, use point cut not flat, about 4 pounds
1/4 C Mayonnaise
1/4 C Dijon mustard (coarse grain)
1 Bunch scallions, chopped
1 cup water
1 head cabbage, cut in 6 wedges
1/2 cup water
Dijon Sauce:

1 cup whipping cream
1 Tbsp. Worcestershire sauce
2 Tbsp. Dijon coarse grain mustard
1 Tbsp. chopped parsley
-- salt and pepper, to taste

Directions

CORNED BEEF:



Mix mayo and dijon. Spread mixture over top of corned beef. Press chopped scallions into mayo-mustard mixture.



Place meat on a rack in a large Dutch oven; add spice packet to bottom of dutch oven, add 1 cup water. Cover and bake at 325
