Egg / Sausage Muffins

Ingredients

1 lb browned crumbled sausage (I use maple)
1/2 Cup heavy cream
salt / pepper
8-10 eggs beaten
1-2 cups shredded cheddar cheese (to taste)

Directions

Preheat oven to 350. Spray muffin tin with PAM cooking spray.

spoon cooked sausage into muffin tin - filling halfway. Top with 1-2 tbsp shredded cheese. Mix eggs, cream, salt and pepper together and pour into tins (over the ssg and cheese) filling almost to the top, these will rise a tiny bit.



Bake approx. 20 minutes until eggs are done and slightly brown on top. Remove from oven and let sit 3-5 minutes before removing from muffin tins.

Additional Information

You can make these with any variety of meats or ingredients. I've also made them with ham cubes, peppers and onions - to make them a southwestern "muffin" Delicious!!

These make a great breakfast!! You can make them in advance and just microwave them in the morning when it's time for breakfast! Very fast and very good!!
