Mediterranean Pork Chops

Ingredients

6 Large, 1 inch thick pork chops
1 t Butter
1/4 C Pine nuts
1 Clove garlic, minced
1 Medium red pepper, seeded and finely chopped

1/2 C Chicken broth
1/2 t Grated lemon rind
1 1/2 T Green onion, minced
1 1/2 T Parsley, minced
1 dash Oregano
1 dash Salt
1 dash Pepper

Directions

Cut pocket into side of pork chop without the bone. Salt/pepper to taste. Set chops aside.
