LC Potted Meatballs

Ingredients

1 pound ground beef
1/2 Cup crushed porkrinds
1 egg
1/2 Cup grated cheese (parmesan or romano)
Salt and Pepper
Seasonings of choice (garlic powder onion powder, herbs
etc.)
1 large onion sliced

Directions

Mix beef in a large bowl with egg, pork rinds, salt and pepper to taste, and seasonings of choice. Form into meatballs and then place them into a pot, sliced onions on the bottom, and add water to come up about halfway up the meatballs. Bring to a simmer and let it cook covered for about 45-60 minutes.

Remove meatballs, and dump out the onions, keeping some of the liquid if desired. Serve with liquid over cooked chopped broccoli, mock mashed potatoes or just use the meatballs with cooked spaghetti squash and a LC spaghetti sauce.
