Hot Thai Soup

Ingredients

2 1/2 C Chicken stock
1 C Unsweetened Coconut milk
1 Stalk lemongrass, peeled and sliced
1 garlic clove, finely chopped
1/4 tsp Cayenne pepper
2 C Diced cooked chicken

1 Medium carrot, peeled and grated
2 C Shredded fresh spinach
2 Green onions, sliced diagonally
1/4 C Chopped fresh Thai basil or cilantro

Directions

In a medium saucepan, combine stock, coconut milk, lemongrass and garlic, Cover and cook 10 minutes over medium high heat.



Add cayenne, chicken, carrot and spinach, Cover and continue cooking 5 minutes.



Add green onions and Thai basil just before serving.
