2 t Lemon zest
9 Large eggs, at room temperature, separated
3/4 C Cold water

1/2 C Vegetable oil
4 t Vanilla extract, divided
1/2 t Cream of tartar
1 C Heavy cream
2 T Splenda
1 Quart strawberries, halved
1/2 C Blueberries
