Boursin Mashed Turnips

Ingredients

3 1/2 lbs Small turnips, peeled, cut into 2" chunks
1 1/4 C Boursin cheese with garlic & herbs, (10 ounces)

1/2 C Heavy cream
Salt/pepper to taste

Directions

Place turnips in a large pot and cover amply with water.



Bring to a boil over medium-high heat and continue to cook until the turnips are very tender, 20 to 25 minutes. Drain the turnips in a colander. Return the turnips to the pot and cook over low heat 30 seconds to evaporate any water that may be remaining on the turnips.



Using an electric mixer, beat the turnips until smooth. Add the cheese and continue beating until it is thoroughly incorporated. Thin the turnips by beating in the heavy cream and season with salt and pepper to taste.

Transfer the turnips to a microwave-safe bowl, cover with plastic wrap and heat in microwave on HIGH setting 30 seconds, stir and heat another 15 seconds or until thoroughly heated.

Serve immediately for peak flavors and texture.
