Cheesy Stuffed Smoked Pork Chops

Ingredients

6 Thick-Cut Pork Chops (8 ounces each)
Liquid smoke
Olive oil
1 C Crushed pork rinds
1 C Shredded smoked Gouda cheese

3/4 C Chopped Ham
1/2 t Ground black pepper, divided
1 1/2 t Butter, melted
2 T Olive oil
1/2 t salt

Directions

Preheat oven to broil.



Cut a pocket in the pork chop by cutting along the rounded side and up to the bone.



Combine crushed pork rinds, cheese, ham, and 1/4 teaspoon pepper. Add melted butter; mix well.



Stuff about 1/3 cup of filling into each pocket, secure closed with toothpicks.



Brush one side of chops with olive oil, and liquid smoke, season with salt and remaining 1/4 teaspoon pepper.



Place on broiler pan in oven; set broiler pan 3 inches from heat. Broil chops, turning constantly until no longer pink.

Keep brushing with olive oil, and liquid smoke and broil until lightly brown. Serve immediately.
