Chicken Burritos

Ingredients

4 chicken breasts, boneless and skinless
2 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
sharp cheddar cheese, grated
sour cream
cup green onions, chopped
salt and pepper to taste

Directions

Filet or "lay open" the chicken breasts by slicing through the middle, but folding them open instead of cutting all the way through. Gently pound the breasts as flat as you can without creating tears. These will be the "burrito" part. Combine oil and lime juice and place in a plastic bag. Add chicken and refrigerate for 30 minutes to 2 hours.



Put chicken on hot grill and season to taste. Cook through and let rest on platter for several minutes. When cool enough to handle, place desired topping on chicken and roll up like a burrito.

Additional Information

We serve these with black olives, tomatoes, chopped onion, lettuce, anything you would like on a taco or burrito.

You can cut the breasts in half for a smaller taco like size. These are great and after a little practice you can get them very thin and crispy.
