Grilled Pepper Pizzas

Ingredients

4 Ripe Green or Red Bell Peppers
2 Tablespoons Olive Oil
Salt and Pepper to taste
1 lb Sweet Italial Sausage
Thinly sliced Roma tomatoes
Mozzarella Cheese
Onions, black olives (Optional)

Directions

Slice the peppers in half long way to make "boats". Remove stem and seeds.

Coat pepper with olive oil and sprinkle with salt and pepper.

Lightly stuff the peppers with the sausage creating a little concave in the middle for the toppings.

Grill over low heat. Do not flip. The bottom of the pepper may turn dark but will add to the flavor of the "pizza".

I add thinly sliced tomatoes about 10 minutes into cooking and then the cheese and other toppings just before serving. They're like stuffed peppers with a pizza twist.

They took about 30 minutes to cook through.
