CREAMY SUMMER YELLOW SQUASH CHOWDER

Ingredients

3-4 small to medium yellow summer squash, sliced thin.
1 small onion, chopped fine.
1-2 medium turnips, cut into small cubes
1/2 t Fresh tarragon leaves, chopped
About 1 cup of heavy cream
Salt to taste
White pepper to taste
2 Chicken boullion cubes
1 t Xanthan gum



Directions

Place vegetables in a medium sauce pan and add enough water just to cover the vegetables. Bring to a full boil and reduce heat, cooking until turnips are tender. Add 2 chicken boullion cubes to water and stir until dissolved.



Add xanthan gum a little at a time until thickned.



Add white pepper and salt to taste.



Add fresh tarragon leaves and stir.



Add half-and-half until mixture has the consistency of a chowder.



Warm until bubbly and thick.
