Cilantro Crusted Pork Loin

Ingredients

1 lb Pork Loin
1/2 C Almond flour
1 Egg, beaten
1/4 C Parmesan, fresh, grated
1/4 C Cilantro, chopped

1/4 C Crushed pork rinds, fine
1 T Vegetable oil
3 T Butter
3 T Cilantro, chopped
2 T Lemon juice
1 1/2 T Soy sauce, dark

Directions

Cut loin into 1" thick slices.



Place almond flour, egg, cilantro and pork rind crumbs in that order, each in a separate dish.

Dredge loin slices in that order.



Heat oil in pan and fry breaded pork pieces until golden brown......about 2 1/2 minutes per side.



After cooking all the pork, remove pork from pan and melt butter in pan. Scrape up any remaining bits.

Remove from heat and add remaining ingredients.

Pour sauce over pork pieces.
