Grilled Merida Pork Steaks

Ingredients

MARINADE:

8 Limes, juiced

1/2 C Olive oil

1 t Cayenne pepper flakes

Salt/pepper to taste

1 Bunch fresh cilantro chopped

4 Thick pork steaks

2 Red onions, sliced


Pico de gallo:


1/2 Bunch fresh cilantro, chopped

1 Onion, chopped

1 Jalapeno, seeded & chopped

2 Tomatoes, chopped

4 Cloves fresh garlic, minced

Directions

Mix marinade ingredients in a large bowl or ziplock bag, add pork steaks. Marinade in refrigerator for 6 hours.

Prepare medium-hot fire in grill.



Place pork directly over fire; grill pork for 8-10 minutes, turning once. Grill until juices run clear and meat is no longer pink.

Saute sliced onions in a little olive oil until carmelized. Set aside.

Mix all pico de gallo ingredients in a bowl and let blend in refrigerator for 1 hour.





Place grilled pork with carmelized onion on top on serving platter; spoon pico de gallo over the meat/onion. Squeeze some fresh lime juice over and serve with remaining lime wedges.

Additional Information

Make sure to add carb counts if serving the salad etc.
